Anna Scholz: Anna’s Kitchen: Healthy Breakfast Recipe Ideas

I’m very excited for my second column and have chosen recipes that are healthier ver- sions of all time favourites for the start of the colder Autumn weather.

Who doesn’t love a cottage pie? Add a healthy serving of vegetables and replace normal potatoes with sweet potatoes.
Add berries and cinnamon to a warming porridge breakfast and drink plenty of fla- voured, detoxing lemon water. Don’t forget to still enjoy cake. This one is gluten and sugar free and completely delicious.

Cinnamon porridge with apple

– 50g organic large Oats (I like a porridge with a bit of bite)
– 300- 400 ml of Almond milk (low in calories and heart healthy, low glycemic index)

– 1 teaspoon of Cinnamon
– 1 teaspoon of chia seeds (full of calcium, omega3, antioxidants and provide energy for hours)
– A touch of honey (antioxidant) or agave to sweeten
– 1 grated Organic apple

porridge-onePour the oats, your choice of milk, chia seeds and cinnamon into a saucepan
and gentle heat up, once it is boiling reduce the heat and simmer for about
10 minutes. How you like you porridge really depends on your taste. I like mine quite thick, and still with a little bite.
If you prefer your oats softer cook for a little longer and add extra milk to make it creamier.

Once you are happy with your consistency, serve steaming hot in a bowl, drizzle your honey (or agave syrup) on top and place the grated apple on top.

Mix up and enjoy
(It is the same recipe for the banana version, but you add 1 sliced banana and
a spoon of flaxseed (high in fibre and stabilizes blood sugar) on top instead of the apple
